Launching Link Lab

Link Lab Artisan Meats is a Seattle-based boutique butcher shop, specializing in the production of hand-made fine sausage and other delicious charcuterie. Our meat is sourced from some of the finest and most conscientious local farmers we’ve met. Most importantly, all the fresh meats we use in our sausage is beautiful, fresh, and delicious. By producing amazing sausage, Link Lab Artisan Meats intends to help customers support our great Pacific Northwest farmers by enjoying a wide variety of sausages made from traditionally raised animals.

With this blog, I look forward to sharing stories, pictures, and unique insight into the complex and critical world of thoughtful and responsible meat production (and meat consumption). My path from an amateur sausage-enthusiast to launching a USDA inspected business that legally sells meat in the United States is complex, but it is worth it. From sausage-making techniques, to taste-test notes of heritage breed animals, to small-farm partnerships, to federal meat regulations, there are plenty of colorful stories to share. I hope you enjoy the blog. And I hope it makes you hungry for great sausage.
